Looking for an Egg-Cellent Breakfast Spot in Fullerton?

Fullerton home owners have no shortage of fantastic restaurants, but when you’re looking for a fantastic breakfast spot, Early Bird Café delivers. Joseph Mahon is cooking up some amazing breakfast creations, including one of the best omelets in Southern California.

Mahon used to man the grill at Burger Parlor, and was also the executive chef at Bastide in LA. But he had the idea for Early Bird Café, and decided to move forward with the breakfast joint. The La Habra native also worked for Daniel Boulud, one of the most famed French chefs in the world. When it comes to Boulud, it’s been said that his first test for any chef in the kitchen is to see whether or not they can prepare a proper omelet. Clearly, Mahon passed the test.

Mahon’s omelets are one of the best breakfast things to have happened to Fullerton in a long time. Whether you get one filled with chorizo and avocado or Hatch chiles from New Mexico, you seriously can’t go wrong. In addition to world-class omelets, Early Bird Café also serves up bacon and eggs, pancakes and waffles. Oh, and speaking of waffles, Mahon serves his with fried chicken and gravy, and a salad of green beans, beets and arugula. He also does a mean chilaquiles with a smoky ancho chile-based red sauce that’s served with two sunny-side-up eggs and some steak.

There’s something comforting about this new breakfast outpost, chief among the reasons that it’s located right in Fullerton. If you can’t find it, follow the scent of bacon that wafts from Early Bird Café. It’s perfumed just like any great breakfast spot should be.
